Who we are

Hi, I’m Martin Baux.

A French pastry chef with 20 years of Pastry experience.
From working in small bakeries, to Michelin star restaurants, I have enjoyed producing various styles of pastry over the years.

I started my journey in the South of France, which is where I grew up. Then I moved to London in 2013 for 2 years where I was head pastry chef at Fortnum & Mason.
I am currently based in Amsterdam with my wife and daughter, the place we have called home for the last 10 years.
